Classic process: marinate (onion juice, tomato, yogurt, spices) → stack meat and fat → ~24 h refrigeration (meat/fat particles bind) → spit assembly → vertical roasting.
Marinating methods (industry literature): immersion, injection, tumbling, or injection + tumbling. Injection gives consistent distribution in large/complex products with less labor and more speed; tumbling gives fast, uniform absorption at controlled temperature, with large volumes and high flexibility.
LATAM market trend: döner/kebab is a growing market (greater interest in Middle Eastern cuisine, more foodservice investment) → industrial production of frozen/portioned spits is gaining ground.
