Pulled meat ("shredded/pulled meat") and cooked products demand precise control of fiber structure, stable juice binding and high reproducibility. Manual or semi-automatic processes produce soft texture, irregular fibers and high labor costs. MAKU industrializes the process without losing the "hand-pulled" look.
Challenges: uneven fiber lengths from manual shredding, cloudy or overly dry texture after cooking, and high labor and time costs.
Injection: uniform distribution of juice and seasoning, fiber stabilization during cooking, and higher yield and juiciness.
