Description

In industrial pork processing, MAKU optimizes the raw material through precision brine injection and vacuum technology to maximize protein activation and water binding.
Steaks & tenderizer: firm fiber (neck/loin) → the tumbler accelerates marinade absorption; the blade rollers (tenderizer) pierce the connective tissue → better texture.
Ribs / bone-in: the bone means a risk of needle breakage/contamination → single-needle pneumatics with automatic retraction; deep injection at the base of the bone against dry edges.
Bacon / smoked products: heterogeneous fat/lean structure → uneven brine, gray core and cooking loss → the tumbler maximizes water retention, with pressures adapted for color penetration/stabilization. Specials / trotters: collagen-rich → intense mechanical pre-treatment; the tumbler with a "washing effect" removes blood residues better than by hand.
